To show my geekiness: Every class of ship is named after the first production model of that ship. The Enterprise 1701-A was Constitution class because the first ship of it's type was called the Constitution. The Enterprise-D is a Galaxy class, because the first one of it's type was the Galaxy. If you recall, when the Defiant was introduced, it was called a prototype that was never mass-produced... until later. So it's perfectly reasonable that the small warship class is indeed 'Defiant Class'.
