I have a chr I made that is larger than normal. My question is, how do I adjust the thing so that it can't walk through a passage bigger than it is?

Well, if you read the readme with the chrmak utility, it will explain hotspots to you. A hotspot is the part of an entity that is obstructable. An average 16x32 verge entity has the bottom 16x16 square as it's hotspot.

Now, unfortunately, maped only handles obstructions in 16x16 squares anyway, so you can't have as much control as you may want. More importantly, though, is that the v2 engine will only recognize the bottom 16x16 square of an entity as a hotspot. IE. the chr format recognizes hotspots but the verge engine doesn't yet (or will ever?).
