How big is too big? (re: dungeon size)

Been working on my maps and so far I'm at 7 of them for the first dungeon.. (no, they don't each take an hour to get through & the game lets you run faster - it's mostly small rooms and a few bigger ones, not the size of cave rooms like Galaxy Destroyer has for example) and I'm still not even close to done with what I have planned for it. I have a bad habit of keeping to want to add things, make stuff bigger, side quest stuff etc
People would probably be spending way more time in there than the town it's near at the moment, and it doesn't even have monster encounters yet.
So back to the topic, is 7+ maps for a dungeon too big? is 3 maps? Should I try to keep all future ones under 40? :)

It doesn't really matter that much, actually. It just means lots of map switches. Some people try just cramming every room in one big map (black space surrounding it), but the collection of small maps can work a bit more effective sometimes.
If it's over 10 rooms or so, you could probably try to make it so that more than one room is on a map, just to reduce the amount of map switches.

I generally place all of my dungeons on the same map, with the rooms carefully spaced so that one is never visible from the other.

I wouldn't say a limit is all that necessary. A small map takes a very short time to load, so it's fairly seemless. Furthermore if you have a -huge- map, it will run better as multiple small maps.
