...And most of FF1's music, to be sure. Uematsu was at his best at the beginning, really.

My all-time favorite is going to have to be the Zeromus battle from FF4.
Runners up include Simon's Theme from Castlevania 4 and the miniboss music from FFMQ.

Dear Jesus, how did I forget Cid's Theme. That's like pure emotional gold. And the Orchestral version hasta be in the top 3 of all time.

Zelda3 pretty much owns any FF music there is. As does TMNT4. And Actraiser ruled.

I'm glad somebody mentioned Zelda! That theme is classic. Whenever I talk to people who can actually name video game music composers, I'm always disappointed that Koji Kondo is rarely mentioned :(
I don't think I should write out my favourite songs, as I'll be here for awhile, but my favourite soundtrack is FFVII (Aerith's Theme being my favourite track).
Also worthy of a mention is "Twinpeak Mountain" from Brave Fencer Musashi.

Hm, Xenogears probably has my favorite music. Especially the overworld theme. There are a bunch of others, but I don't know the names of the songs.
ChronoTrigger: Guardia Forest theme, Underwater Palace, the music from the floating city, Frog's theme, the cathedral theme.
FF1: overworld, temple of fiends (revisited, too), castle theme, ending credits theme
FF4 (best in the FF series, IMO): Overworld, boss battle, Zeromus battle, Cave of the Sylph, Bahamut's Cave, Airship theme, the opening theme that also plays in Lunar Subterranean, the Giant of Babil theme that also plays at the bottom of Lunar Subterranean.
FF5: Gilgamesh theme
FF6: overworld theme
FF7: Overworld theme, boss theme, train graveyard, Jenova battle, the music that plays when Cloud is recalling his past with Sephiroth for the first time
FF8: battle theme with Laguna
How about some non-RPG music?
Megaman 2: Quickman, Bubbleman, Flashman, both themes from final castle.
F-Zero: Fire Field, Big Blue, Port Town, White Land
Ninja Gaiden 2: That theme that plays in the stage with wind blowing, and again in the stage with running water.
Lots of stuff from Gradius 3 and Super R-Type is pretty good, too.

You know... I just today discovered this thing called "The Black Mages". If you like Final Fantasy music, you'll be interested to hear about this. Nobuo put together a rock band with himself in it as the keyboardist, and they released an album covering various FF music. They even held a live show in Tokyo. I've heard a couple songs and its pretty damn cool. Final Fantasy music with guitar solos. :-D

The BlackMages CD is awesome. The FF5 Gilgamesh theme remixed in a rock style just sounds amazing.

Xenogears has by far the best music of any game ever. And all these posts have reminded me of great music and some great games. Brave Fencer Musashi! Hell yes! Hmmm... After looking at your list, I have to once again compliment your taste Tech, those are some great tunes.

I remember e-mailing you waaay back in the past to ask you about the warming up thing in the library (SotS) though; something like woodwinds warm up by playing from high notes to lower notes in the scale. Hm.
Still; you = flute player (how do you spell flothist anyway?). Hmm.
I don't know what to say.
